Introduction

My version of a "Squidoo" website recipe. As the website promises, these are filled with fruity, nutty goodness. It's left up to the baker for what fruits and nuts to use. I chose dried apricots, prunes and dried cherries. Splendid combination! Much better than store-bought granola! Only 68 calories per cookie! My version of a "Squidoo" website recipe. Ingredients

    Light Butter, 1.5 sticks
    Splenda Brown Sugar Blend, 3/4 cup
    Cinnamon, ground, 2 tsp
    Ginger, ground, 1/4 tsp
    Nutmeg, ground, 1/4 tsp
    Baking Powder, 1/2 tsp
    Baking Soda, 1/2 tsp
    Salt, 1/2 tsp
    Vanilla Extract, 1 tbsp
    Egg, 1 large, lightly beaten
    Old fashioned rolled oats, 1 1/3 cups
    Whole Wheat Flour, 1 1/2 cups
    Natural almonds, whole, 1 cup, roughly chopped
    Dried apricots, 1 1/4 cups, chopped into small bits
    Sunsweet Ones, Prunes, approx. 1/2 cup (about 8), chopped into small bits
    Dried Cherries, 1/4 cup, chopped into small bits

Directions

Preheat oven to 325 degrees. Cream together light butter, Splenda Brown Sugar Blend, all spices, baking powder, baking soda, salt and vanilla. Beat in egg. Add oats, flour, chopped nuts. Mix well. Add all chopped fruits. Mix well. Drop cookie dough by small spoonfuls onto non-stick baking sheet. Bake for approx. 12 - 13 minutes. Do NOT OVERBAKE! Cookies should just start to turn brown on edges but still be soft in center. I used a small cookie scoop, 1.5 inches diameter, and got 58 cookies which equals only 68 calories per cookie!
