Introduction
I love Rachael Ray's recipe for Turkey meatloaf so I decided to modify the recipe to make it into burgers and cooked on the grill - delicious! Especially after topping it with Grilled Pineapple, Turkey Bacon, BBQ Sauce and Mozzarella Cheese. Ingredients
-
Burger
1 lb. 93% Lean Ground Turkey
1/4 cup chopped red pepper
1/4 cup chopped onion
1/4 cup chopped carrot
1 glove garlic or 1/2 tsp minced garlic (from jar)
2 tsp worchestershire sauce
Toppings (optional):
Fresh grilled pineapple slices
Turkey Bacon
Mozzarella Cheese
BBQ sauce
1 Tbsp, Ketchup
Directions
Chop up the red pepper, onion and carrot and saute in 1/2 Tbsp. olive oil until veggies are tender - allow to cool slightly before combining with the remaining ingredients so you do not start the cooking process. Form mixture into 4 hamburger patties and refrigerate until ready to cook. Grill and cook for about 7 minutes per side.
While burgers are cooking I put Turkey Bacon in the oven on a cooking stone at 400 degrees for 15 minutes or until crisp to your liking.
I also had a fresh pineapple on hand tha I sliced and grilled. I placed 1 thin slice on each burger along with 1 slice of the turkey bacon. I also melted 1 Tbsp of Mozzarella Cheese onto burger and finished it off with a squirt of Sweet Baby Ray's BBQ sauce (about 1/2 Tbsp).
This Burger was a WINNER with everyone even my picky eaters! Enjoy!
