My version of the "Beet This Burger" developed by Olinda Cho-Forsythe - native of Guatemala and a full-blooded Mayan.
These pancakes are a healthier (occasional) indulgence for all of you looking for a lower carb alternative to tradition pancakes! They do have gluten (Maple Grove Farms mix), but I imagine they can be made gluten free by substituting with more flax meals, or perhaps some coconut flour. I find the blend of flours gives a pretty authentic texture. These pancakes are a bit thinner than your traditional wheat flour pancakes, and you can even thin them out more with an extra 1/3 cup of water for crepes.
This serves as a great base for a variety of pizzas. You can top with loads of veggies, mushrooms, even chicken for some extra protein. Just grill up your toppings in a small pan while preparing the rest of the pizza. Minced garlic, slightly browned in a pan is a delicious alternative to the garlic powder in the recipe.
I used Fiber One Multi-Grain English Muffins in my calculation as they are delicious while containing 8 grams of fiber and 5 grams of protein per muffin.
