Thai-inspired pumpkin soup. I use fresh, cooked pumpkin, but canned also works. Use light coconut milk to reduce fat content, the soup will be thinner but will taste as good.

I was looking to make White Chili one day, and all the recipes I found were too complicated. Since I knew White Chili was basically white beans, chicken and chilies, I threw this together and was pleased with the results.
puree asparagus (used ends), add squash, water and soup mix. Use hand mixer to blend until smooth. Turn heat to simmer, add other ingredients, simmer for 90 minutes.
