this is a very quick and easy muffin recipe that is perfect for breakfast or any time and can easily be customized by adding fruits or spices to it. If you want a lower cal version substitute 2 egg whites for the 1 whole egg.
Serve as a side dish or breakfast, as others in the house may rebel if you make it the desert. You can't omit the raisins, it will be like eating baby food or sad over cooked carrots. Nuts may be added. Spices can be added, adjusted or omitted to personal preference.
