Preheat oven to 350F
Grease an 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan, or use muffin pan
Add banana, milk and eggs, mixing well. Add dry ingredients, mixing just until moist. Stir in nuts and cranberries. Spread batter evenly in a loaf pan.
Bake for 1 hour and 10 minutes or until a toothpick insertedin the center of the bread comes out clean. Remove from pan and cool.
Fast yummy breakfast. You can throw in any veggies you like to this. This is just the ones I like. You can also get ground turkey breakfast sausage and mix it in the eggs
I use 1/4 cup to measure out my pancakes. This recipe makes 6 pancakes. Double if you need more. I place the blueberries, on the pancakes after I pour the batter into the pan, that way you don't have a lot of berries in one spot.
The original idea came from The Hungry Girl. I tweaked it a little bit, in part to give it more nutritional value, and in part because I don't do Splenda (or similar sweeteners).
