My son is allergic to egg and dairy products, so I adapted this for him from a recipe that my mother gave me. These muffins aren't very sweet, but you could add some extra sugar or splenda to the recipe if it is not to your taste. I don't advise replacing all of the sugar in the recipe with splenda (or any other sweetener), since it could have an effect on the over-all result of the muffins. If you don't mind a couple of extra calories, try adding some white chocolate chips or nuts to the recipe.
This is probably my favorite breakfast of all time. Serve over steaming hot biscuits and fresh fruit on the side.
Serve these hot right away with organic preserves, marmalade, heated honey or pumpkin butter. These are great for Sunday mornings while getting ready for Church.
A yummy new take on whole wheat pancakes. With the use of whole eggs and white whole wheat flour they taste like fluffy diner pancakes but without all of the oil and sugar!
We love to top ours with strawberries and cool whip free to make them like strawberry shortcake pancakes! Would also be amazing topped with butter and syrup or jam!
The use of coconut oil and shredded coconut along with the vanilla bean paste makes these muffins AMAZING!
