Hearty Healthy soup full of vitamins
(it may be a little heavy on calories but the vitamins will blow your mind)
Crepes are versatile, super easy to make and far less heavy than traditional pancakes. This is a slightly healthier version. Great for a weekend treat! Feeds a crowd. Omit the stevia and vanilla extract for a more savoury lunch or dinner version. Fill with savoury or sweet fillings.
Can bake ahead of time and reheat in microwave in the morning. Optional: add jalapenos, green/red pepper, cilantro, etc.

I changed part of the flour to whole wheat and added the cashews to add healthy fats.
I use a mini-muffin tin for these. They're best warm and get stale quickly, so eat or freeze!

A feast of raw superfoods that blend perfectlty to create a fresh, crisp summer salad that's easily transportable to the office, the beach, etc. It can be prepared in advance and/or in batches and will keep easily in the fridge for days provided you don't add any of the leaves (Lettuce and spinach), any of the seasoning or the corn until you need it. A bit of chopping is required but small quantities go a very long way when you shred or grate.

These muffins are vegan, moist and tasty. They are your workhorse banana muffins. Nothing fancy here but good flavor.
This is like a hearty, savoury french toast casserole. Assemble it the night before and stick it in the oven in the morning. Serves 8
