Introduction

Crepes are versatile, super easy to make and far less heavy than traditional pancakes. This is a slightly healthier version. Great for a weekend treat! Feeds a crowd. Omit the stevia and vanilla extract for a more savoury lunch or dinner version. Fill with savoury or sweet fillings. Ingredients

    3 eggs
    1 tsp vanilla extract
    dash of salt
    1.5 cup of milk
    1 cup Spelt flour
    3 tbsp grape seed oil (or butter)
    1 tbsp inulin fibre
    1 tsp stevia

Tips

Serve with a home made berry sauce or with maple syrup. This is not a 'diet' recipe, just a slightly healthier version of a weekend treat. For the savoury version, fill with asparagus, ham or any other savoury filling.


Directions

In a blender add all liquid ingredients. Slowly add flour. Blend until all ingredients are fully mixed, for about 30 seconds. Let mixture rest for about a half hour. Heat frying pan or crepe pan on medium heat. Spray with Pam when heated. Pour just enough batter to cover your pan in middle and raise and tilt pan until mixture flows evenly to edges and around pan. Keep tilting until mixture stops flowing. Leave pan on heat until edges are golden and crispy. Gently with a large spatula, flip crepe over to cook other side. Crepes should be slightly crispy at the edges and golden brown all over. Flipping too soon will cause the crepe to tear.
