Zip Lock Omelets
1 small zip lock bag
2 eggs mixed with a small amt. of milk (pour into zip lock bag)
Add anything you like in an omelet. I use cheese, peppers, and onions)
Seal bag while letting any air out of bag.
Drop into a kettle of boiling water and time for 12 minutes……Remove bag, open slowly
And put omelet on a plate…..Perfect omelet everytime.
I found this on FANNEtastics food blog. Sounds delicious and tastes even better! She usues frozen blueberries, but I think raisins are just what the recipe needs!

Adapted the recipe on the back of the Bob's Red Mill coconut flour to include ww pastry flour & rice protein powder in lieu of rice flour, and coconut beverage w/ vinegar in lieu of buttermilk
Jazz up traditional French toast with sweet peaches and heavy cream in this make-ahead breakfast casserole dish. It's perfect for holiday mornings, birthday celebrations, or any day you want to make extra special. I modified the original recipe to cut down on calories and sugars, although it still needs some tweeking.
You may use this with whatever fruit you like, experiment a little bit. Hungry Jenny called for cranberries, but I used cherries. I also changed her recipe into an individual serving and used ingredients I had on hand versus her ingredients (for example, she used grapeseed oil, not vegetable oil) and made it sweetener free versus just sugar free (you don't need it, the fruit sweetens it enough).
Delicious as breakfast or as a dessert.
