Introduction

Ingredients

Whole Wheat Pastry Flour 6 T
Rice Protein Powder, 1 serving w/ 12 g. protein & 60 cal. or 2 T
Coconut Flour, 2.667 tbsp/ 1/6 of a cup
Baking Soda, 1 T
Granulated Sugar, 1 tsp--sub stevia mixed in w/ liquid ingredients
Cinnamon, ground, 1 tsp
Coconut Milk Beverage - Plain & Unsweetened, .75 cup
Apple Cider Vinegar, 1/2- 1 t.
Egg, fresh, 1 large
Smart Balance Light Buttery Spread, 1 Tbsp, melted
Tips
Serve w/ maple syrup and butter or...
Directions
Put a griddle or cast iron pan over medium heat.
Stir vinegar into coconut, or other, milk. Set aside.
Mix dry ingredients together
Melt smart balance. Mix it in with the egg and milk. Add stevia drops if replacing sugar.
Add wet to dry ingredients, mix with a whisk until just mixed.
Pour batter onto griddle, cook until golden brown on each side.
Serving Size: Makes 2 servings of 5 silver-dollar sized pancakes
