I give credit to JENNLOVE for inspiring this recipe with her Crustless Spinach, Onion and Feta Quiche recipe. I love to wander through the farmer's market, pick out the seasonal fresh vegetables, and figure out later what to do with them. This is how this dish came to be. Because of the skim milk and reduced amount of eggs, it is more similar in texture to a frittata than a true French quiche, which is richer and creamier. But it is still very good and makes a good dish for dinner or a nice Sunday brunch. My son (Mr. I-Hate-Quiche) loved this and gobbled down two slices.
Sigara boregi is a Turkish cigar shaped pastry made with feta cheese and phyllo dough. This fried pastry is perfect with coffee, but can be eaten as an appetizer or side dish.
Sausage links are cut and mixed into a batter of pancake mix which is baked. Serve with Maple syrup and enjoy.
This is a popular drink called "Mugicha" in Japan. It is noted for cooling down the body in hot weather, for cleansing the system, treatment for hemorrhoids, inflammatory arthritis and breaks up congestion, phlegm and other symptoms of colds and flues.
It can be served hot or on ice.
These Blueberry Muffins are always quick to disappear. They are low in saturated fat yet still moist and flavorful. The surprise ingredient in these muffins is yogurt. Yogurt, as you probably know, is good for our bodies plus it has the ability to make muffins tender and moist with an almost bread-like texture. I used homemade lowfat plain yogurt. This wonderful recipe is adapted from Gail Sher's cookbook From a Baker's Kitchen.
Energy bites, energy balls, power balls, you choose! I found this recipe on Pinterest by withfoodandlove and tweaked a couple of things.
These were originally named Raw carrot cake, which is quite suiting I think. To me they have a distinct season of fall taste. Enjoy this nibble with some coffee or on the go. I'm secretly wondering if they can be used as a spread..... you'll let me know, right?
A Dutch Baby is basically a cross between a pancake and a popover. Serve it with fresh berries or nothing more than jam or a lavish sprinkling of lemon sugar.
Definately not a low calorie option, but so tasty and filling. I freeze them and have one when I'm craving something sweet.
