A satisfying quinoa salad with an asian flare, lots of fresh veggies and lots of crunch.
I substituted ground turkey, low fat ricotta and mozzarella cheese to make this lower in fat. I made it the night before and put it in the refrigerator. I served it while we were camping the next day and it was a big hit with everyone. I used the no cook lasagna noodles and it really saved a lot of time. They came out very tender. This is also great for a dinner party because you can make it ahead of time.
This is a great way to get a lot of vegetables in for those picky eaters. It is also very filling and keeps you satisfied for a long time. I make it and freeze it in 1-cup servings to have on hand for a quick and filling lunch. It microwaves great! I use a small food processor to cut down the time of chopping the vegetables. You can eliminate the crushed red pepper if it is too spicy for you.

This recipe was in Gourmet magazine back in 2005. I just tried it and wish I had tried it sooner!
I used more chipotle in mine and did not seed it and also used venison and beef ground to lower the calories and fat some. I also made my burgers smaller and came out with 6 rather than 4.
