I served it while we were camping the next day and it was a big hit with everyone. I used the no cook lasagna noodles and it really saved a lot of time. They came out very tender. This is also great for a dinner party because you can make it ahead of time.

I make it and freeze it in 1-cup servings to have on hand for a quick and filling lunch. It microwaves great! I use a small food processor to cut down the time of chopping the vegetables. You can eliminate the crushed red pepper if it is too spicy for you.
