I decided to take a classic sugar cookie recipe made with olive oil and use whole wheat flour, splenda, and some spices. Everyone in my family loved them!
These parfaits are great when you want to entertain, yet still want to stick to your healthy way of life. Because of the sugar in the graham crackers and whipped topping, however, it's best not to make this an everyday treat. The layerd combination of mousse, whipped topping and grham crackers definitely make this worth a splurge. I like these desserts in a wine glasses for a gorgeous presentation.
