Don't let the name fool ya! This is a moist and tasty cake. Just think of what mayo is made from??? Eggs and oil. So it makes an easy substitute if you don't have any eggs on hand, or oil.
Most "healthy" dessert recipes look healthy at first glance. Maybe low fat and low calories. Maybe high fiber and protein. But on closer look, you'll find they have an insane amount of sugar per serving - 20 to 40 grams! These muffins, though, truly are healthy. Low Cal, low fat, fiber, protein, and only about 9 grams of sugar per serving. You could easily leave out the chocolate chips and cut the calories, fat, and sugar in half, and they'd still be yummy!
I got this off another recipe website. I didn't have a 8 in square pan so I used a 5x9 in loaf. If took much much longer that way. about an hour or more
