A tipsy laird is a Scottish riff on the English trifle. It is rich, creamy and flavoured with Drambuie – a softer, more flavourful version of the more familiar trifle. Buy good almond cookies and sponge cake rather than making them.
This makes a very fluffy, light flavored frosting that is great for piping. Made this for my neices birthday party and everyone loved it. Have made many times since and will continue to use this as my "go to" frosting.

This moist and delicious recipe was made using a standard spice cake recipe. I simply substituted egg whites for whole eggs, applesauce for oil, and whipped cream for butter and powdered sugar.
