This is a much healthier alternative to regular meatballs. They're also pretty delicious. They taste great with spaghetti and sauce. I prefer to serve them with Trader Joe's Organic Whole Wheat Spaghetti and Trader Joe's Garlic Marinara Sauce. Sometimes the mix can become a little squishy and so we just use it as "meat sauce" instead of rolling into balls. If you wait long enough for moisture to evaporate, making balls should not be an issue. As meatballs they are even better the next day. I find that using frozen chicken breasts keeps them moist and makes it more convenient so you can still make this meal even if you forgot to thaw something for dinner!

Being Giada's recipe I'm not sharing except with you Kathryn.
The only thing I changed was she had 2 teaspoons of salt, I used one and it was good. She said a pound of tomatoes - I didn't really count but put in 8 - looks right.

This is truly a cook once and serve three times... I doubled this recipe and ended up with enough sauce to make lasagna three separate times (this recipe is the doubled version)... I assembled the recipe and divided the remaining sauce into two gallon ziplock bags and froze for a future date.
