My 10 year old and I tweaked a manicotti recipe to make our own healthy spinach lasagna. We substitute low salt spaghetti or tomato sauce to lower sodium content.
Slap the layers together any way you want- just begin with sauce and noodles, and end with sauce and cheese.
The spinach filling is also good for stuffed manicotti, homemade calzones or ravioli. (we make ravioli out of wonton wrappers or lasagna noodles.)
This is a lighter version of the Moosewood Cookbook style. No soaking or frying needed. The eggplant slices are baked until crisp. (even good on their own)

Homemade spaghetti sauce for a family of 2 or those who like just enough sauce to coat their pasta, not swim in it.
This is a great recipe. If have two children who do not like the lemon. I don't add a few pieces to the gravy and they eat it that way. Recently I didn't have any lemon so I left that out and my husband and one daughter loved it. They actually thought it was better. I like the lemon flavor. I also use fat free chicken broth. Use fresh or jar parsley, I have used them both. I also buy one package of chicken breasts, which usually weighs a pound. (give or take). This is a great recipe for a party. I have made this many times and put into a large tray and served at parties. Everyone loves it! I aso like to use one Eggland Bests Eggs. They are very good for you. Beat Egg with one tablespoon of water!
