So we attempted to make 'Wicked Good Turkey Lasagna" but we changed it around a bit.
Instead of traditional shrimp scampi we decided to try something a little different....

1 c. elbow macaroni, cooked according to pkg. directions
1.5 oz. bacon (1 slice)
2 T. Butter
2 T. half and half cream
2 T. Parmesan cheese
1 T. tomato paste
.25 tsp. onion, I used 1.5 T. fresh onion
This is an easy recipe for this pasta dish. I used 2% milk, but 1% would be better. Low fat cream cheese was used...try fat free cream cheese, too. Using a clove of garlic, instead of the garlic powder, plus altering the butter and garlic is an idea. Use all butter or all garlic, or using half of what called for this recipe.
This is a beautiful dish that's full of flavor. The anchovies aren't quite distinguishable. Instead of being overpowering, they lend a savory depth of flavor that is impossible to achieve any other way.
Crockpot Lasagna (Hubby's favorite he doesn't even like the oven style one anymore) Obviously to reduce calories and fat you could use ground chicken or turkey and cottage chees instead of low fat ricotta cheese.
This is the sauce I use over my meatballs. (recipe name on SP is Irene's Meatball's). This can be used on anything obviously. Other recommended uses over pasta or whole wheat hoagie roll for a meatball sandwich.
By using lean ground turkey, lots of veggies, non-fat cottage cheese and whole wheat noodles, this lasagna is much lower in fat and calories while still retaining all the yummy flavor. And the serving size is rather generous.
This soup is so tasty. It's so simple and makes 7 1-cup servings. Perfect to warm you up on a cold day. The garlic is the best part so don't skimp. You can always skip the chives. Grated parmesan is a nice topper, too.

In trying to save money and eat healthier, experts and cooks alike recommend having a "no meat" meal at least once a week, so I've been on the hunt for satisfying no-meat inspirations to satisfy my poulty loving husband and my own meat lover's soul. /kale_and_white_bean_stew) here is my interpretation of the recipe to get a similar feel. This soup is packed with nutrition and also will satisfy any meat lover for a no-meat weeknight meal !
