A low carb recipe. I leave out the tortillas though. Chicken could be added for more protein and be sure to add cheese and avacado to individual servings of soup. If you are not watching your carbs, then you can add tortilla strips to your bowl of soup. Make homemade ones by frying strips of corn tortillas in oil until crispy or use packaged tortilla chips.
A quick cheese I threw together with ingredients on hand to stuff pasta shells with. Ended up being a delicious snack with crackers as well.

Nutritional Info includes 1 serving, however in my ingredients list I will include the entire recipe (serves 4). Sodium is high, however I drain and rinse my beans so I know this lowers the sodium more than listed. Dairy products also add sodium, so those can be eliminated. I try to use this as a dinner after a low sodium day (that way I don't exceed my daily limit of 2300 mg). ENJOY!
