This VERY filling "fried" rice uses no oil, just non-stick cooking spray, and has lots of great veggies and a delicious flavor. Recipe works best with leftover rice that has been refrigerated overnight. Makes one giant serving or two smaller servings.
I got this recipe from Dr. Oz's site; however, I added the vegan meat and some additional changes. As the recipe it's suppose to make 16 servings, but it made me 13 cups, so not sure how it will work for you.
Great delicious colorful salad for a Summer day, I was craving a salad after my run and I decided to make my own. The Tofu adds the protein needed after a good run and the fresh veggies cool you down from the inside out.
