Introduction

This VERY filling "fried" rice uses no oil, just non-stick cooking spray, and has lots of great veggies and a delicious flavor. Recipe works best with leftover rice that has been refrigerated overnight. Makes one giant serving or two smaller servings. Ingredients

    1 cup cooked brown rice
    2 cups raw broccoli florets
    1/2 cup frozen mixed vegetables
    2 tbsp soy sauce
    non-stick cooking spray (canola or olive oil)
    I Can't Believe It's Not Butter! spray
    garlic powder
    black pepper
    powdered ginger

Directions

Cook rice ahead of time and refrigerate until cold. Cold rice works best as it will not become mushy when heated.

Lightly spray a skillet with non-stick cooking spray and add broccoli. Cook until slightly softened. Add mixed vegetables and cook until heated, about 3 minutes. Spritz with buttery spray for some extra flavor.

Add cold rice and toss over low-medium heat with a wooden spoon until rice is heated through. Sprinkle soy sauce, ginger, garlic, and pepper until seasoned to your liking. Pour it all into a bowl (or two) and enjoy!

Makes one giant serving (about 2.5 cups) or two smaller servings.

Optional: If you want to add 1/4 cup scrambled Egg Beaters for some extra protein, scramble that before you cook the broccoli and veggies.
