Very yummy and flavorful. Of course you can make this into a sandwich or serve with sliced tomatoes.
My attempt to create a stir-fry in soup. All the ingredients I added were diced fresh then frozen, and added from a frozen state as an experiment, which worked!

I cover lentils with 4 cups boiled water to soak for the time it takes me to chop/dice the vegetables; rinse and drain when it's time to add them to the recipe. I also use fresh tomatoes that I pureed rather than crushed. I have a kitchen gadget that removes the seeds and skins from tomatoes, so I used that and it went quickly. You could also use high quality canned crushed or pureed tomatoes. I calculated 16 cup yield from this recipe, or 2 cups per serving.

This is an easy to make vegetable soup. You can substitute w your favorite brands - I listed mine which coorespond to the nutritional values for a 1 C serving. You can substitute your favorite frozen veggies - just use somewhere in the neighborhood of 24-32oz of frozen veggies. You can also subsititute different flavors of broth. I also add chunks of cooked boneless chicken to this recipe to pump it up for dinner time. Enjoy
