Ingredients

    1 c chopped broccoli
    1 c frozen mixed vegetables
    1 cup elbow macaroni (dry)
    1/2 cup salsa
    2 tbsp sour cream

Tips

add meat, beans or other protein to make a fuller meal, and increase number of portions.


Directions

put vegetables, broccoli, macaroni, and salsa in a medium pot. add enough water to just cover the pasta. cook on medium to medium high until pasta is done, vegetables are hot, and almost all the water is absorbed. add sour cream, and stir.

Serving Size: lunch for two, hearty dinner for one
