May substitute beef or ground turkey for venison. The dark chocolate makes the chili a little darker in color--coffee works as well. Would suggest beer instead of wine but I didn't have any beer. Be careful with cayenne pepper--this was spicy. Couldn't tell this was made with venison after it had cooked for a short while.
