A wonderful summertime salad that provides lots of colorful veggies, great crunch and is very flavorful.
This can also be made substituting Greek yogurt or cottage cheese, but nutrition counts will change.
Although this recipe came to me with a mayo/buttermilk dressing attached, I found that I liked it much better dressed with just some vinegar. This is best with a mixture of several different kinds of beets if you can get them, but will delicious even if you just stick with the traditional dark red ones.
This is a sweet and tangy salad dressing. Splenda could be used to substitute the sugar but the flavor is slightly compromised due to the after taste of the Splenda.
This keeps from 5-7 days in an plastic seeled container in the referigerator.
Halve avocado. Slice fruit and arrange on place. Place empty skin in center of plate.
Chop apples, grapes and turkey. Mix together with light mayonnaise.
Fill avocado skins/shells with turkey salad and enjoy!
