Healthy and protein packed salad dressing or dip!!! Who knew ranch dressing could actually be good for you!
I used to buy a similar salad at a deli before I retired and ate it 2 or 3 days a week. Now, I've devised my own version here. The chopping/slicing/dicing takes awhile, but is well worth the finished product. (My version is virtually sugar free and low carbs. I'm sure the deli used sugar, not sweetener, and they added raisins or craisins, which I have eliminated.)
This unbelieveably tastes like pasta and can be a great low carb alternative in the summer. The spaghetti squash is great more for winter, but this is very fresh and light.
No BBQ is complete without this staple.
I used rotini pasta because that is what I had but Dreamfields makes an elbow macaroni if you can find it.
This recipe is a great, healthy, cold salad and is a big hit everywhere I take it. Add a tablespoon of spicy salsa to kick up the flavor and heat into your individual serving.
