Trying to satisfy my 6 year old's request for mac and cheese while simultaneously providing a healthy meal brought me to put a few recipes together to create this. High quality pasta will elevate this dish to be better appreciated by the foodies in the crowd. The best thing about this dish is that it only uses one casserole dish and a blender!

A healthy filling way to start the day. This is a remake of my mom's recipe. I cut out the sugar and limited the oil from 1/3 c. to 2 Tbsp. You can add in any fruit or nuts instead of blueberries. Try adding cut up bananas to the batter or put them on top instead of syrup!

This recipe comes from Bill Phillips' Eating for Life book. Can use any brand of protein powder (I like the taste of Muscle Milk brand) and whole grain bread (I look for low carb). Also, the recipe calls for 1/4 cup of sugar-free maple syrup, but I did not include it. Instead of syrup, I like to make a mixed berry compote by cooking down some frozen berries with Splenda (although can also use brown sugar if feel strongly against sugar subs). I also like to put some walnuts and sugar-free whipped cream on top. Yummy! But, feel free to improvise.
This is a great sandwich for carb contious dieters. I used Arnold's 12 grain bread here. Works great with any whole grain bread.
This recipe is modified from Kalyn Denney's original recipe. It excludes added salt, replaces 1 tbsp olive oil with 2 tbsp oil substitute, replaces 2 tsp brown sugar with 1 tsp stevia powder. This modified recipe also uses half and half whole wheat and rye flour instead of 100% whole wheat flour.
