This soup is tomato based and full of veggies!! I usually make it with ground beef, turkey or stew beef, but this version is veggie only!! Also, it is so good with a small slice of cornbread or multi-grain crackers.

I make my own soup stock whenever I cook meat with bones... 1 turkey carcass (picked clean... keep the meat to make the soup)in about 1 gallon of water and let it stew overnight. pour it through a strainer to remove any bone fragments.

Adding some real maple syrup might be nice but will add to the calories
