Slow Cooker Salsa Chicken with Black Beans
A variation on a great recipe I found on Spark Recipes. The chicken is so tender that we usually shred it and eat it in Mama Lupe's low carb tortillas or over brown rice. Also good as a nacho topping over baked tortilla chips.
