I only cooked 1 cup of brussel Sprouts with a Russet potato and reduced the rest of the ingredients,it is plenty for one single serve, quick.. low calorie meal in a rush, nice tasty side dish, Love the Garlic Flavored olive oil idea! I have to try that next. time!
