cant wait to make it for lunch. Will substitute for 100% whole wheat tortillas but will cut back on beans for calorie range :-)
What is a good way to use up the leftover "scraps" from cutting the corn tortillas?? Seems like a waste to throw it away! I was thinking I could spray it with some cooking spray and sea salt then bake until crispy to make chips. But I've never done that before. Would it work? Other ideas welcome!
