I like to use California blend vegetables in mine, been making this soup for years, not sure that the calorie count is the same with the 2% velveeta cheese but none the less this is a good recipe!
I also add a little boiled chicken or low fat ground turkey Italian sausage! And for variety I use California Mix veggies (broccoli, cauliflower and carrots)
