I do this with Lemon Pepper. Great idea. Where do you find low sodium/salt cajun seasoning?? I used to use Tony Chachere's, but I only have the original blend (which is chock full of salt). I now use Mrs. Dash original mixed with Mrs. Dash Extra Spicy and sometimes just add a pinch of Tony's to it.
