Just made these this morning. The only thing I did different was brown sugar instead of white sugar and low fat buttermilk instead of milk. They were delicious. Best bran or oat muffins yet. Moist and very flavorful. Not at all like a traditional bran muffin. Will make these again and again
Just finished a batch of these, I used applesauce instead of oil too, brown instead of white sugar, spelt oats and added a couple handfuls of chocolate chips. I got 12 muffins and 24 mini muffins. Very moist and delicious!
I used applesauce instead of canola oil for a lower fat version and they turned out very good.
Just made these- very good. I used 1/4c fat free sour cream and 3/4c milk and aso added 1/2c mini chocolate chips. I got 21 good sized muffins from this recipe- there was no way I could fit the batter into 12 muffin cups! (:
