I'm not much of a cook, but this sounds great! I'm going to add extra firm tofu for a complete vegetarian meal in one pan with added protein.
Okay, I made it and ended up adding rotel for color and an extra jalapeno to balance out the tofu and extra eggplant I added and it was great! TY
