I have made this several times now. I added an extra stalk of celery, and a few drops of lemon juice, along with 2 hard-boiled egg whites to boost the protein a little bit. Mmm delish. Have also used almonds instead of walnuts. Big dish of good taste and little calories!
If you use plain, non-fat yougurt, you cut out a lot of the sodium (about 21 mg). The mayo contributes 220 mg of sodium to the total!
I also make this with sugar free cherry jello. Let jello set until it gets thickish & add apple, celery & walnuts.(not carrots)
I added to it pepper, a dash of salt and a bit of lemon. During holiday season leftovers of chicken or turkey matches it well.
I don't think the sodium content is high at all. Sounds delicious!
Simple & fast to make. I used yogurt instead of mayo to cut fat & as part of my milk serving for the day.
Quite surprised at the sodium count! Celery does contain natural sodium, but has properties in it that make it very good for you, especially if you have hypertension.
Make it lighter and lower in fat by mixing milk into the mayo (approx 1/4 milk to 3/4 mayo). Never use carrots. Add cooked chicken - veg fruit protien + bread - complete meal.
Last night I entertained my family for my brother's 60th birthday - I served Waldorf Salad - one of my favorites!
I am going to make this for my friend. She is on a low fat diet and getting very fed up of the way she has to eat. She wil love me for it, I will make it with vanilla yogurt. Thanks. Vi
I skip the carrots and add raisins instead of walnuts. Next time I'll try it with non fat yogurt.
too much sodium
I love this recipe. I substituted plain, non fat yogurt for the mayo and added lemon juice.
Sounds good but where does all the sodium come from?
