This is awesome! I made it with sauteed squashes (yellow, zucchini, and eggplant). I also added mushrooms and onions and fat free ricotta cheese.

I used lowfat ricotta (instead of cottage cheese), a 16 oz bag of spinach (instead of the 10 oz bag listed), chopped carrots and sliced mushrooms. My husband and I both loved it. This is going to be one of my regular recipes!
I used lowfat ricotta cheese instead of cottage cheese, doubled the spinach, added a little dried basil and oregano, and didn't use an egg. Delicious!!
I use Egg Beaters instead of eggs and 1/2 low fat, 1/2 fat free cottage cheese. I also use chopped fresh spinach and add shredded carrots and sliced mushrooms. My kids love this!
