Introduction

A simple pancake that is easy to prepare and to cook
Galettes keep for at least a week in the fridge but wrap them in foil or clingfilm so they do not dry out. Can also be frozen.

Ingredients

    1 1/2 tablespoons of Oat Bran
    1 1/2 tablespoons of non-fat fromage frais or quark
    1 egg (or egg white if have cholesterol problems)

Directions

Put oat bran in a bowl, add non-fat fromage grais or quark and one egg.

Mix all the ingredients thoroughly and pour on to a non stick pan that has been greased beforehand with a few drops of oil then wiped with kitchen paper.

Cook for 2-3 minutes each side.

Makes one serving/pancake

    I love this. In the US recipe it is 1 egg white, 1 and 1/2 tbsp of Oat bran 2 tbsp of Greek nonfat plain yogurt and 1 tsp of Splenda. I also add spices or vanilla to add to taste. I cut it into strips and dip it into Nonfat flavored yogurt. - 8/6/11

    My favourite way to cook this is to make up the basic mixture (either sweet or savoury), spread very thinly on baking parchment into a long oblong shape which I then bake on a baking tray in the oven at 180C for 20mins. When cold, use it like bread to make into sandwiches for work lunch. Mmmm - 5/10/12

    good touches, if sweet then with cinnamon or vanilla, if savoury then with salmon
    I also use greek yoghurt as per the American version
    It can be made lighter density by separating the yolk and adding to the yoghurt and bran and whipping the egg white and folding it in to the mix before cooking

    The US version of the book, which I recently bought, calls for Greek yogurt. I suppose this is because we can't get fromage frais or quark. This pancake is filling and palatable. I moved to the Cruise phase today and I can't believe I don't miss syrup and butter on my "pancake"! - 5/22/11

    love it! If I make it in the morning, I usually add a bit of vanilla extract and a light sprinkle of stevia. At night I sometimes make it savory with a tbsp of tomato sauce, italian herbs, onion & garlic pwdr, red pepper flakes, and 35 calls worth of reduced fat shredded mozzarella melted on top! - 2/7/12

    i changed it a bit so i could make two

    first pancake:

    I 1/2 tablespoons of Oat Bran
    1 tablespoon greek yogart
    a dash of almond extract (I'm low on vanilla but it was delish!)
    1 egg white

    second pancake:
    1 tablespoon oatbran
    1 tb greek Y
    1 eggwhite

    Wow this was great, it'll be my new weekend (when I have time) breakfast. I subbed plain Greek yogurt, added cinnamon, a couple drops of vanilla, and a sprinkle of stevia. It turned out just like a "real" pancake, and didn't even need a topping. I don't know what Dukan is, but thank you for posting! - 5/4/14

    I really like these and for a small quantity of food find them surprisingly filling. I added a tsp of pumpkin pie spice and 1 tsp of sugar light (stevia and sugar-5cal/tsp) and made 2 pancakes and divided 1/4 c of cottage cheese on top and sprinkled a little more pumpkin pie spice on each.     Try it with baking chocolate to make a chocolate version. BTW I found fromage blanc and quark at whole foods. It took A LOT of driving to find it in the USA. I also found a recipe to make your own fromage blanc (using culture starter C20) and quark, if anyone is interested. - 6/30/11

    I just started on the Dukan Diet last week. The recipe I found was like this except it called for low-fat cream cheese if you didn't have quark. I started last Wed & this is Tuesday & I've lost 7.2 lbs. Will try it with cottage cheese. My husband puts maple syrup on his since he isn't dieting! - 5/17/11

    I love this and make it all the time. However, instead of yogurt, I am using Kefir (a little bit more liquid). Aren't you supposed to beat the egg white and fold the Oat Bran and Yogurt (mixed) under it? I also top it with berries and/or 1/2 sliced banana. So good. - 3/22/13

    Use the Quark--it makes a difference! I make mine with cinnamon, slather on the ff cream cheese and add some lox, and this becomes my bagel substitute. I've lost 30 lbs on the Dukan diet in 3 months and look great...want to lose 15 more - 7/27/12

    We tried this diet. This pancake was fantastic and The Only thing beside the yogurt that we could follow. Still, there is not enough fiber int his pancake to stop constipation.

    I do love it though and think it can be part of any program that you do.

    If I'm having this for breakfast I like it just like a pancake - lots of sweetener and a bit of freshly squeezed lemon. I also usually make the mixture into 2 or 3 smaller galettes instead of one large one.

    Tried this for the first time today. I used vanilla non fat greek yoghurt and separated the egg white and whisked separately first. Nice flavour but tasted very 'eggy' so don't think I'll put the yolk in next time. Very filling and you do only need the one! Worth trying. - 8/7/11
