Ingredients

    1 1/2 cups of steel cut oats
    6 cups of water
    1/4 tsp. of salt
    1 tbsp. of brown sugar
    1/4 cup of honey
    1/2 tbsp of cinnamon
    2 apples - chopped
    1/2 cup of dates - chopped
    15 oz Can pumpkin

Directions

Place in crock pot and cook on low 4 to 6 hours.

Reheat by adding some milk.

Makes 12 3/4 cup servings

    Used raisins instead of dates. Added 2 additional TBS brown sugar because it really wasn't very sweet. It was pretty easy and tasty overall considering it's kind of healthy. I also added 2 TBS chia seeds. - 10/4/16

    Gave this a try because I love pumpkin. I had to use a packet of Splenda and extra cinnamon in my bowl as it wasn't sweet enough for my taste. I also think raisins would be better than dates. Still, I liked that it was hearty and it inspires me to try more slow cooker oatmeal recipes. - 10/29/13

    I loved this! Just finished my first serving. I used cranberries in place of dates but made exactly as the recipe called. I usually like a lot of brown sugar in my oatmeal but was pleasantly surprised that I found it just right. I added about a half cup milk when I reheated. Delicious! - 10/17/12
