Ingredients

    2 cups boiling water
    2 cups 1% milk
    2 cups diced potatoes
    1/2 cup chopped cauliflower
    1/2 cup diced celery
    1/4 cup chopped onions
    1/2 tsp salt
    1/4 tsp pepper
    1/4 cup low-calorie margarine
    1/4 cup all-purpose flour
    2 cups shredded low-fat cheddar
    1 cup cubed lean ham

Directions

Heat water in a large pot.
Add the potatoes, cauliflower, celery, onion, salt and pepper to boiling water.
Cover and cook over med-high heat for 10 minutes. Do not drain!
In a medium-sized sauce pan, melt margarine then add flour. Slowly add milk while whisking mixture.
Allow the sauce to thicken, then add to the veggie mixture.
Slowly stir in the cheddar until melted, add ham cubes and stir.
Do not bring soup back to boil.
You can serve immediately if you like, I like to transfer the soup to my slow cooker and leave it on low heat until ready to eat.

So good and so wonderful to be eating so few calories! I didn't add ham and used broccoli instead of cauliflower. I served this to my family today and everyone loved it. Thanks for such a great recipe! - 11/1/08

Good - next time I will double the cauliflower to stretch it out a bit, and maybe some garlic. Was great with a roll and a salad. - 1/7/10

Simple, easy recipe, with every day ingredients. I actually used chopped, frozen onions, celery, & green peppers, along with potatoes, chopped bacon instead of ham, and the other ingredients. Very tasty! Wish I had some cauliflower available - would have been a nice touch. Love it though! - 8/18/10

I have made this probably 10 times now! I love it!!! Each time I make it though I play around with it by adding more cauliflower, adding broccoli, omitting the potatoes, chopping things big, chopping things small...every time it tastes just a little bit different but always GREAT. - 7/21/11

Yummy! I added 1cp. corn, more onions, added parm. cheese, and decreased the cheddar by 1/2 cp. Added a clove of garlic and red pepper flakes. Very good on a cold day. I will try this with other veggie combos too. - 4/14/08

I also used broccoli instead of cauliflower and added minced garlic to the veggies, then added mustard powder when I added the milk. Even using fat free milk this still was rich, creamy and really a 'comfort food' dinner! - 2/26/11

This was fabulous! Added some dried mustard to the white sauce and swapped the onion for leeks as that was what I had. Successful with my picky eaters although it only did them 4 servings not 6. If 6 would need a bread roll or similar. - 2/24/11

Made this last night, simple and delicious! Was a bit thicker than I expected so will thin it out a little by maybe adding a little more water. I only changed the milk by making it w/skim. Daughter said lacked seasoning; will try w/garlic as several suggested. - 2/8/11

Very, very tasty just as is! I let the milk mixture thicken on low, whisking frequently, for about 15 minutes. Will try again with less potato and more cauliflower. - 2/3/11

This was absolutely delicious. My whole family loved it. I do think it needed a little bit of seasoning though. I added some parsley. Next time I will probably add some other herbs, maybe some dill or thyme or something. I also think it would be great with broccoli and corn. - 3/19/08

This was delicious. My hubby amde it for me and it was ready to go when I got home from work. Almost all the ingredients were already in the house so it was extremely convenient. He says its a sinch to make and thought we could also use turkey instead of ham sometime. I sent it to friends to try. - 1/10/08

I LOVE cheddar cheese! I'm going to try it, but will probably try to cut the sodium & fat content some more ... maybe Mrs. Dash for seasoning ... ham & cheese already has plenty of salt. - 11/6/07
