Ingredients

    1 can Libbys Pumpkin
    2 cups Almond Silk 60 calories
    3/4 cup Blue Agave
    4 eggs
    3/4 cup egg whites
    1 teaspoon cinnamon
    1 teaspoon ground ginger
    8 Tablespoons or 4 scoops of protein powder

Tips

Serving is 3/4 cup.


Directions

Combine ingredients and pour into a 9X13 greased baking dish. Bake for 60 minutes at 350 degrees F.

    Just made this and I like it, but it doesn't come out like the photo. There's no flour so it won't be bready like banana bread, it's more custardy. I used small loaf pans and baked for 60m & it was still v wet. Wondering if oats would help. I added raisins & cardamum. Maple syrup would be good too. - 5/21/13

    The picture does not look like the finished product.....did I do something wrong? The finished product (I say product because it is NOT BREAD, nor does it bake correctly) ..... it's WET an soggy! What type of frosting do you use here? Recipe please. - 5/22/13

    I'm going to assume the smaller can of Libby's but I agree with LESLEES10, can we get the size of can? Also, can you explain why we need 4 eggs AND egg whites? Just curious on that (I'm not a baker :) The picture has icing on the bread...there is no icing recipe here?? - 5/21/13

    I agree with everyone else, the picture IS misleading... but I DID enjoy this. It the recipe had said "custard" or even "flan" - which is more how this turned out - I would have rated it a 5. Overall not bad and a good use for all that protein powder. LOLOL - 9/9/13

    Re: comments -- some helpful; some misleading! Tip on serving size (3/4 c) indicates this isn't bread; bread isn't measured or served that way. Since recipe makes a custard serving 9 @ 3/4 cup per serving, that's 27/4 c, or 6+3/4 c total. Count cup ingredients; pumpkin MUST equal 2 c can! - 1/26/18

    Stevia is always a good alternative to any sweetner or sugar. That is all I use. Do not use splenda..it has been shown to be bad for your health. Check Costco or even your regular grocery store for Agave. It' not that expensive. Don't get it in "health" food stores as they will charge more for it. - 7/3/13
