1 can Libbys Pumpkin
2 cups Almond Silk 60 calories
3/4 cup Blue Agave
4 eggs
3/4 cup egg whites
1 teaspoon cinnamon
1 teaspoon ground ginger
8 Tablespoons or 4 scoops of protein powder
Tips
Serving is 3/4 cup.
Directions
Combine ingredients and pour into a 9X13 greased baking dish. Bake for 60 minutes at 350 degrees F.

Just made this and I like it, but it doesn't come out like the photo. There's no flour so it won't be bready like banana bread, it's more custardy. I used small loaf pans and baked for 60m & it was still v wet. Wondering if oats would help. I added raisins & cardamum. Maple syrup would be good too. - 5/21/13

Stevia is always a good alternative to any sweetner or sugar. That is all I use. Do not use splenda..it has been shown to be bad for your health. Check Costco or even your regular grocery store for Agave. It' not that expensive. Don't get it in "health" food stores as they will charge more for it. - 7/3/13
