Ingredients

    1 English (seedless) cucumber, peeled

    1/2 cup peas*
    1 tablespoon horseradish mustard
    1/4 cup sour cream, reduced fat
    1/4 cup hummus

    1 sprig fresh dill, separated into 12 sections

    * I used no-salt added canned peas, but you could also use thawed frozen peas.

Tips

We often turn to bread, crackers, or other whole-grain products as a vehicle to get dip from point A to point B. I like to use vegetables whenever I can. For this spicy, creamy dip, I used cucumber, but you could use any vegetable: hollowed cherry tomatoes, celery sticks, or endive leaves.


Directions

Cut the cucumber into 12 rounds (approximately 2 inches each). Scoop out the inner flesh being careful not to scoop out all the way through to the bottom. Place the slices on paper or cotton towels to drain.

Puree the peas, mustard, and sour cream using a blender or immersion blender, or mash with a fork until smooth.

Fill each cup with 2 teaspoons of hummus, then fill to the top with the pea mixture. Garnish with a dill sprig.

One filled cup per serving.

    I usually hate when some just say they are going to try something instead of actually writing a review, but when you have Q's about a recipe, there is no other place to ask. Is that a tomato slice on top and is it only 26 calories if you eat all 12? What is the serving size? I'm thinking just 2. - 5/2/12

    I'll need to give this a try - sounds really fresh, but also, it would need to be made very shortly before eating, I think - though maybe I could make the cucumber cups the day before and keep them well chilled in the fridge? Just assemble shortly before needed? Anyone tried this? - 12/1/10

    I am so glad to see the community creating healthy, beautiful party bites. The picture makes me want to have a party, or at least make a tray of the "shot glass dippers" and cucumber bites to take to the Cancer Center for Thanksgiving. Won't that be a beautiful alternative to a pie? - 11/2/12

    Good as is, but not great. However, start mixing in fresh herbs and BINGO! Fun and easy to experiment with. Good stuffed with tuna salad and with a sprig of pimento on top too. It didn't mention it, but I used the scooped out cucs in the mix(es)! Made a variety for party! Looks like thyme in pic - 5/24/12

    these were very very good. i made them for a small bbq at my sisters and everyone loved them. they went fast.
    ps GERIHIRAI its not that chef megs pictures are deceptive. if you make them right they look exactly the same. its just that chef meg sets them up decoratively to make the pics look pretty

    I used zucchini instead since I can't eat cucumbers. The first time around, it was disappointing. The second time, I subbed the sour cream for Greek yogurt, added fresh dill and sun-dried tomatoes (not oil packed) and viola! Good to go. - 8/22/12

    The pic has hummus on top-- which makes sense since the pea puree is runnier. The instructions, however, direct us toward green gloriousness. {EDIT: Close-up shows dollop of pea. I used frozen so my peas are very bright.} - 1/23/11

    Made for a picnic last week, made 36 and all were gone in a few minutes. Several people asked for the recipe. After tasting the pea mixture did add more horsradish mustard, put that is a personal taste. - 8/22/12

    i eat the whole cucumber without peeling it. You can run your fork from one to the other and it looks like a snowflake. But you would have to peel it to see if. I put it on the relish tray and get a lot of comment on them. - 5/2/12
