Introduction

Ingredients

2 prepackaged Pork Tenderloin (2-3lbs)
1/2 Cup sliced Almonds
STUFFING
1 medium Apples, fresh
1 Cup Pineapple (diced)
2 Cups fresh Spinach
1/2 Cup chopped Onions
5 cloves of Garlic or 1 heaping T
3 pats of Butter, salted
2 stalks of Celery,
4 slices of wheat Bread
BASTING SAUCE
1/2 Cup Brown Sugar
1/4 Cup Apple juice, unsweetened
1 T Honey Mustard
Directions
1.) In a medium size skillet, melt butter and add onions, celery and garlic. Saute on medium heat for approx 5 mins.
2.) Add pineapple, apple and spinach to the mixture and cook on low for 5 minutes or until spinach has wilted down.
3.) Break the bread slices into cubes and add to the mixture and stir.
4.) Place 1/2 the mixture in a food processor or blender and mix to make a sauce. Once down, place back into skillet and stir together.
5.) Prepare the tenderloins by rinsing and patting dry. Remove any fat. Cut each tenderloin lengthwise, but do not go all the way through. Using a meat mallet, flatten the tenderloins to approximately 1/4" thick.
6.) Grease a back dish big enough to fit both tenderloins and pre-heat over to 350.
7.) Stuff each of the tenderloins with half the mixture and roll, securing with string.
8.) Combine the basting ingredients in a bowl and microwave for approximately 45 seconds.
9.) Pour basking sauce over each of the tenderloins.
10.) Place 1/2 of the sliced almonds on each of the tenderloins.
11.) Bake uncovered in the oven for approximately 50 mins. When finished, let set for 5 mins.
