Introduction

Ingredients

    1 pound extra lean ground beef
    1 cup of Fiber One cereal, crushed
    2 eggs
    1/2 cup Ragu pizza sauce
    6 oz part skim shredded mozzarella cheese
    2 large fresh mushrooms, sliced
    1/4 of one red bell pepper, sliced
    2 slices canadian bacon, cut into 1" pieces

Directions

Preheat oven to 350. In a large mixing bowl, mix together ground beef, eggs, and crushed cereal until mixture is well blended. Press into a cookie sheet or pizza pan. Bake for 15 minutes until brown. Remove from oven and spread pizza sauce, cheese, and other toppings as desired evenly over the meat crust, leaving an inch or two of space at the edges. Return to oven for another 15 minutes, or until cheese is melted and bubbly.
Makes 8 slices.

    Another way to do this is by melting parmesan cheese in a non-stick pan -- sprinkle enough parm to cover the pan -- then bake the toppings on the parm base -- it won't need cooking.

    Use the same technique to make an elegant, edible basket -- form the melted parm over an upside down bowl. Bob

    This is an ok idea if you need a new way to serve meatloaf... that is all it is... a flat topped meatloaf. No one in my family ate it we ended up tossing it, and eating tuna sandwiches. - 2/21/08

    I tried this for dinner during the Superbowl and even my husband who is picky about these things LOVED it. I did substitute turkey pepperoni for the canadian bacon because I had that on hand. But, wow! Good stuff and healthy too?! - 2/4/08

    This turned out great even with the few changes I made (ground turkey sausage instead of beef, rice crackers instead of FiberOne). Finally a pizza I can enjoy totally guilt free. One slice (cut mine in 12 pieces) is very filling for me. Yummy!!! - 9/30/07
