Ingredients

1 Can Canned Chicken
1 Cup Mexicorn
5 Tbs Fat Free Miracle Whip
2 Cucumbers with peel
.5 Cup Canned Beets, Sliced
Pepper to taste (optional)
Directions
This recipe is a variation of CLSQUIRES's Valentine Cucumber Cups.
Cut cucumber crosswise into 1 1/2 inch slices, then cut these slices diagonally leaving about 1/4 inch at the smallest edges. Scoop out centers with a melon baller making cucumber cups leaving 1/4 inch walls.
In a small bowl combine chicken, mexicorn, and miracle whip (and pepper if desired) and fill cucumber cups.
Use a heart shaped cookie cutter to cut the beet slices into heart shapes.
Garnish with beet hearts and serve.
