Ingredients

    1 cup packed brown sugar
    1 cup smooth peanut butter
    1 egg, lightly beated

Directions

1. Preheat over to 350F. Beat brown sugar, peanut butter and egg in medium bowl with electric mixer until blended and smooth.

2. Shape dough into 24 balls; place 2 inches apart on ungreased cookie sheets. Flatten with fork. bake 10-12 minutes or until set. Transfer to wire rack; cool completely.

Serving Size: makes 2 dozen cookies

    Very Good
    I turned these into cupcakes. I ended up burning the tops of them, but I could tell that deep down and aside from my terrible baking, this was a really nice recipe. I also realised that the last of the sugar had gone, so I used icing sugar! - 8/27/13

    Incredible!
    I am so surprised that no one has commented on these cookies. First, they are incredibly easy to make. Second, they are incredibly delicious. Third, I don't even really like peanut butter cookies, but I love these! And fourth, for gluten free/dairy free the ingredients inexpensive/readily available - 2/6/12
