Ingredients

    For meat filling:
    1 lb ground turkey, raw
    1 cup onions, raw, chopped
    1/2 cup celery, raw, diced
    1 cup mushrooms, fresh, chopped
    1/2 cup green peppers, chopped
    3 cloves garlic, minced
    1 tbsp basil, chopped
    1 cup long grain brown rice,
    1 cup water
    1 can diced tomatoes

    For layering:
    1 can diced tomatoes
    1 small head cabbage, fresh, shredded
    1 small can sauerkraut (approx. 2 cups)

Directions

Brown turkey in a non-stick fry-pan then add:
onion, celery, green peppers, mushrooms, garlic, basil and what ever else your heart desires at the time.
Add a can of chopped tomatoes,a cup of brown rice and 1 cup water and let it simmer until the rice is cooked.
You could add more rice but I try to lower the calories with veggies and less rice.
Spray Dutch oven with cooking spray. Layer shredded fresh cabbage, layer of turkey rice veggie mixture another layer of shredded cabbage, some sauerkraut and half of a can of tomatoes.
Add a layer of shredded fresh cabbage, then a layer of turkey rice veggie mixture, another layer of shredded cabbage, some sauerkraut the other 1/2 can tomatoes and bake it in the oven at 350-400*F until it is cooked through.
I like sauerkraut but you could skip whatever you don't like.

    This was great, it made alot! If you like cabbage rolls but dont like the time to roll them then this is great. next time i will use a but less cabbage. - 3/24/08

    I used shredded "cole slaw" mix to save time. 1 10 oz bag was plenty. I also added red peppers. I'm not sure layering was necessary. I ended up mixing it all together. I love the recipe and will definately make it again. - 4/22/07

    I was under time crunch when I made this and ate before putting it all together. Small rice bowl w/cooked cabbage leaf. Varied: used tony's seasoning, Italian tomatoes and chopped yellow squash. Served family next night with veggie side and they liked it. Great Flavor. - 1/9/08

    I'd make this again. You get such a huge serving and I love sauerkraut! I used coleslaw cabbage pre shredded in the bag cause I am lazy..lol.
    My family (kids and DH) like it just "ok" but I think if they eat it again and again they'll like it more.. hahahaha

    Incredible!
    I made this last night. It came out really good. Next time I make it, instead of shreading the cabbage I'm going to roll the mixture into whole cabage leaves. This would make it more authentic. This recipe gets 5 stars from me. I love saurkraut! - 7/23/09
