Ingredients

    3 large Portabella mushroom caps
    1 cup roasted red pepper pieces
    2 tbsp olive oil
    2 cups instant brown rice
    1 cup black beans
    3 oz shredded mozzarella, part skim
    Garlic to taste

Directions

Brown peppers in oil and garlic until soft.
Add mushroom caps and heat through.
Boil rice per instructions.
Mix black beans with rice in a casserole dish, add whole mushroom caps, top with roasted red peppers
and mozzarella cheese.
Bake at 350 for 20 minutes or until cheese is bubbly.

    Easy to make. I kicked it up with a ton of garlic and flavored my portobellos when I cooked them, and we used a little salsa on the side as an accompaniment. - 2/10/09

    My husband loves mushrooms so this recipe was a good choice to try! It was simple, fast and included my favorite - Black Beans! With two of us at home now, the four servings was great. We had some left overs for another meal. The only thing I would change is to add some onions next time. - 8/19/09

    Great meal but I will make some minor adjustments next time. Like adding onions, more peppers and maybe even some corn. I will also use 4 mushroom caps. Thanks for the great base recipe!! I will be making this for my brother for Easter, he just became a vegitarian this year. - 4/9/09

    I used Pinto Beans rather than black beans the second time I made it, and used a mix of brown and wild rice. It definitely gave it more flavor- but it's still yummy as is! - 11/13/08

    I sauteed chopped onions with the garlic, plus added chopped mild jalapeno's to the rice and black beans. As my daughter is allergic to dairy, we used GOAT CHEDDAR and it added a nice depth of flavor. - 12/24/08

    Great! I marinated the mushrooms in some grill seasoning and apple cider vinegar for an hour before baking. I also added sauteed onions to the top. Thanks for sharing a great versatile recipe! - 2/22/09

    Made this for dinner last night, really good! I took previous advice and added onion and plenty of garlic. I also cooked my rice in veggie broth rather than water for added taste. Next time i will marinate my mushrooms first. - 9/14/10
