Introduction

These taste like cheese blintzes! The pancakes are so fluffy, tasty and are hubby's new favorite! Especially good with jam and/or fresh berries. Could also top with bananas and peanut butter. Ingredients

    1 cup 2% cottage cheese
    1/2 cup oatmeal, ground up
    5 egg whites
    2 tbsp applesauce
    2 tsp ground flaxseed
    1 tsp cinnamon
    1 tbsp splenda

Directions

Grind oatmeal to powder.
Place cottage cheese in medium bowl and blend with hand mixer until smooth.
Add rest of ingredients including oatmeal and blend well.
Cook over medium heat using PAM spray between each pancake.

Serving Size: 1 serving is 1 pancake

    This recipe is great. I did not want high fat like egg yokes or flour. N0 applesauce so I grated half an apple Added cinnamon and instead of splenda I used approx. 1-2 tsp of honey which make them a little crispy around the edges. Froze them for snacks. Thanks for a great recipe! - 5/25/14
